3 Potatoes, Peeled and Cut into Cubes
1 Onion, Finely Chopped
2 Garlic Cloves, Finely Chopped
2 Red Peppers, Finely Chopped
3 Green Chilies, Finely Chopped
1/2 Cup Cilantro, Finely Chopped
3 Pinches Coriander Powder
3 Tablespoons Olive Oil
Veggie Oil for Frying
1 Tablespoon Lime Juice
Salt to Taste


1. Fry potatoes until crisp.
2. Set potatoes on a paper towel to drain oil.
3. In a skillet, saute onions, garlic, red pepper, green chilies, coriander powder and cilantro.
4. Add potatoes, salt and pepper.
5. Mix well and add lime juice.
Note: Serve with cucumber and tomato salad
