Reesh-Eklee (Meat Stew)
3 Beef Feet
1 Beef Shank
3 Pounds of Tripe (cleaned)
4 Garlic Cloves
6-10 Quarts of Water
1. Cut tripe into bite-sized pieces and soak in clear water overnight.
2. Wash all meat and brown in saucepan. When shank and feet are browned, place in pot with tripe.
3. Cover with water and add garlic cloves, and cook over a very low flame 4 to 5 hours.
Hint: Be sure there is always enough water to cover meat while cooking.
