Serve in a bowl lined with lettuce leaves and lemon slices.

1/2 Cup Fine Bulgur (crushed wheat recommended)
1 Cup Finely Chopped Mint
8 Finely Chopped Parsley
2 Finely Chopped Large Onions
9-10 Finely Chopped Tomatoes
3 Finely Chopped Jalapenos
1 Cup Olive Oil
1 Cup Lemon Juice
Pinch of Salt and Pepper
2 Teaspoons Citric Acid


Soak bulgur in water for one hour and then squeeze out extra water. Wash and chop parsley, mint, jalapeno and onions. Mix all ingredients including bulgur. Add and mix salt, pepper, citric acid, lemon juice, olive oil.
